Kalamata's Best for Bread

After trying every olive I could find, I’ve figured out what everyone in bread making already knows: the Kalamata is top dog. Funny I don’t really care for them in any other context. 

Oh and that’s a side of caponata, an Italian roasted eggplant relish.
